The process to upgrade an instance is a small hassle currently, I GREAT improvement would be say a "one-click" option.

Might not be that clear however that version upgrade involves more than just the FME Server Software, so let it be a two-click action :-)

By the way @aaronkoning if I restore an older build FME backup into a new Cloud instance, will the superuser credentials become the credentials in the backup? Or does ik keep the credentials supplied in the one-time-supplied file?

An direct way to upgrade your FME server instance to a newer version would be game changer. Everything (IP, Subscription, alerts and stuff) would still work or be there and you only need some basic testing to see if it works instead of termination a whole instance.

At least a quick way to update the current release as point releases (bug fixes) as made available would be very useful

Totally agree with the 'one-click' option to upgrade FME Cloud. Unfortunately, I now need to migrate my FME Cloud instance after having upgraded to FME Desktop 2021 and getting the warning "To ensure best compatibility, an upgrade of FME Server is recommended" when trying to publish to my existing FME Cloud 2020 instance.
