Has anyone ever encountered this issue before? My feature information window no longer displays any attribute information from the selected feature.

Hi @egomm,
It looks like you might have accidently collapsed the Attributes.
Click on the arrow to maximise the Attributes.
This appears to be persisted if you exit the Inspector. So you may have done it previously and not realised!
