When I am satisified with the results shown in the data inspector, is there a way to export them rather than to start the whole model again from scratch?

I am not sure if this is what you are after, but if you select one or more features and then File -> Save Selected Data As... you can save what you have in the inspector directly. Even you can change the file format or coordinate system directly.

If you select all in the table view and right click you get an option to Save Selected Data As.
Can also be accessed from the File Menu
