The latest builds for Mapnik allow for Vector tiles services for map services. Would it be possible to set something up using FME server and this technology? Currently the WMS and WFS feeds using FME server are a little clunky to use and quite slow.

+5Indeed! I see you suggested pretty much the same thing.
I think FME should overhaul WFS and WMS generally and make it a lot easier to implement and work on. I could happily remove the need for a certain big name GIS package if FME server could serve up maps better to the web.

Please note that this idea will be marked as Duplicate - to fully resolve the request, we need to do work on both FME Desktop and FME Server, which we currently treat separately in the FME Community Ideas.
