I am using a no-fault FME Flow architecture: 2 engines.
Should the engines be restarted regularly, for example, each month? What does Safe Software recommend?

By default, the engines will restart themselves after 100 successful translations or 10 failed translations, whatever comes first. You can modify this in fmeServerConfig.txt / fmeFlowConfig.txt:
