We are currently running FME desktop 2020 with a floating license server (2020). If we upgrade our license server with a 2022 floating license will the 2020 FME desktop installs still be compatible until we finish testing and upgrading?

Upgrade license server to 2023. Can we still use 2020 version of FME desktop?

Yes, I believe it will. We recently installed the current version of license server to replace a version that was installed ~4years ago, no issues with getting licenses
I don't think that the FME License server follow the same release cadence of Form and Flow
