I am wondering if its possible to reproject a 1.8Gb ecw raster image in datum GDA94 MGA54 Zone 54 to ecw raster in the datum of Popular Visualization CRS [EPSG: 3857]? Will FME handle this size ecw for reprojection? Is anyone able to kindly provide a sample Template to get me started? Any help is appreciated..

I think you will just have to try, it's very difficult to say anything for certain with all the variables that goes into such a process. You don't need a template, just read the ECW, insert a CsMapReprojector to reproject and then write it out again.
You can use the "Generate workspace" wizard in FME Workbench to create the reader and writer for you.
