I am wondering about how it works if you want to have mulitpled editons of FME Desktop using the same Lic seerver, so floating lic. So say if we had 10 floating lic, and had 8 ESRI Editions, and 2 professional Editions how does that work on a Lic server, can users pick an edition when they start FME Desktop ?, or do you have to set up user groups for specific edtions, or would you need 2 lic servers, one for each edition ? Just trying to understand how this would work and what the options are for users to be able to choose an edition.

Typically you can have multiple editions of the FME Desktop server from the same license server.
The application(FME Licensing Assistant) is only brought up the very first time when a user launches the FME Desktop application and for all subsequent runs, it will be the same license that they have picked.
Using the option file( for FlexLM server) will give you more control if you want to restrict users via
Username, IPAddress, Groups etc.
I would recommend using options files as it gives you more control and avoids accidental higher edition license checkouts.

The edition of the license is controlled at the first run of the application(FME Desktop).
If the user wants to change the version of the FME License, they will have to open the FME Licensing Assistant application and switch the Edition.
