I am trying to export z values from my LiDAR data so that I can further analyse in ArcMap. I cannot use the LAS extension available in ArcMap so it would be best if it could be done in FME.

Not sure what you are looking for exactly but a PointCloudCoercer can convert a pointcloud to individual points.
If it has to do with your previous question, it might me doable. Like a set of point per pit. But it will get not workable quick of the number of points gets bigger.
