Is there a new AVF writer that displays the updated attributes? Also, is there a way to edit the AVF writer attributes? Updating the attributes in the writer is grayed out and I am unable to update the writer.

If you get a new FME 2018.1 beta with the latest AVF reflected in it, you can use a right click "update writer" on the AVF writer (click on it in the navigator pane). Run through the dialog and the output feature types will be updated to the latest.

The AVF format uses a fixed schema, so the output feature types cannot be changed.

If by update you mean to use the latest updates from Apple - the best way to make sure you have the most recent support possible is to use the latest available beta of our major release version. So in the case of 2018 use 2018.1 beta or 2018.1 release when it comes out.
