One of our team members left the team but has still FME Desktop on his machine + the connection to the license server.
How can I revoke his rights in order to use one license of our floating license server?

@fungergis If the floating license server is in your organization (network), the user should not be able to access it. As David mentioned, if the user's computer is not in your org network, restarting the license server should help you get the correct available license.
Can you verify if the safe.log file indicates that the user is still using the license?
You can also use the option file to restrict the machine to be excluded see documentation here
